Kiwi summer cooling with ice blocks

Did you ever have home-made ice blocks growing up? They were such a treat and have been quite a revelation to me of late. Inspired from when we were given lots of strawberries recently (thanks to you kind people) I asked my friend from Caramel & Co for some ideas. She suggested some ice blocks smoothies and they have been a real hit.


Simply blend a can of coconut milk, a punnet of strawberries and a spoon of manuka honey (or you could pop in a couple of fresh dates) to sweeten it up a little. Then pour into ice block moulds with a stick and freeze. They will need to be in the freezer for at least a couple of hours, so don’t be tempted to take them out too early. I got my trays at The Warehouse for $5 so all in all it’s pretty cheap for a healthy option treat.


Since the initial batch we’ve been experimenting with other flavours. It’s an awesome way to use up your fruit bowl with all this gorgeous summer fruit. I think the winner has been the defintiely been mango (simply replace the strawbs for a mango). Super easy treat for summer days which can be enjoyed by all!!!
